Redi burger

veggie burger with carrot and potato




 

Serves: 4

 


Ingredients

  • 200 g Redi broccoli
  • Half a potato
  • Half a carrot
  • 1 egg
  • 2 tbsp breadcrumbs
  • 2 tbsp olive oil
  • 2 pinches of salt
  • 1 pinch of black pepper

Method

  1. Peel the carrot and potato and cut into small pieces
  2. Cut the Redi into florets
  3. In a saucepan of boiling water, cook the vegetables with a little salt (carrots, potatoes and Redi). After 4-5 minutes, remove and drain the vegetables
  4. Put the vegetables in the food processor and give it a quick blast (not too much, you don’t want the mixture to be too thick)
  5. Some vegetable bits may remain whole
  6. Add the beaten egg, breadcrumbs and a little salt and pepper to the mixture and mix well
  7. Take a little of the mixture and form burgers with your hands
  8. Make as many as you can from the mixture
  9. Fry on both sides in hot oil
